CHEESE & BROCCOLI SOUP

  • 8 large potatoes

  • 2 heads of broccoli

  • 1 onion

  • 1 head garlic

  • 2 or 3 cups cheese

  • ¾ cup cream or milk

  • ¼ cup cream cheese

  • 12 strips of bacon

  • 8 to 10 cups of stock (see stock recipe)​

  1. Cut the potatoes into quarters then boil

  2. Put the stock into a large pot

  3. Cut the onions and garlic up into fair sizes

  4. Strain the potatoes add them to the stock plus the onions and garlic

  5. Blend very thoroughly

  6. Cook the bacon to your preference, crispy or rubbery doesn’t matter

  7. Cut the broccoli into small pieces

  8. Add the broccoli, bacon, cheese, milk / cream, and cream cheese

  9. Mix well

  10. Serve warm
