Cheese Broccoli Soup
CHEESE & BROCCOLI SOUP
-
8 large potatoes
-
2 heads of broccoli
-
1 onion
-
1 head garlic
-
2 or 3 cups cheese
-
¾ cup cream or milk
-
¼ cup cream cheese
-
12 strips of bacon
-
8 to 10 cups of stock (see stock recipe)

Cut the potatoes into quarters then boil
-
Put the stock into a large pot
-
Cut the onions and garlic up into fair sizes
-
Strain the potatoes add them to the stock plus the onions and garlic
-
Blend very thoroughly
-
Cook the bacon to your preference, crispy or rubbery doesn’t matter
-
Cut the broccoli into small pieces
-
Add the broccoli, bacon, cheese, milk / cream, and cream cheese
-
Mix well
-
Serve warm
