FRENCH ONION SOUP

  • 4 to 5 cups stock (see stock recipe)

  • 5 onions

  • 8 scallions

  • 4 tablespoon butter

  • ⅛ teaspoon Tarragon

  • 1 head garlic

  • 1 loaf bread

  • 2 cups of cheese

  1. Put stock in pot

  2. Cut up the onions, scallions, garlic

  3. Fry the onions, scallions, garlic and butter, cook until clear

  4. Add fried components to stock

  5. Slow boil down until a bit denser

  6. Put in bowls, add a slice of bread on top

  7. Sprinkle with cheese

  8. Microwave or oven so the cheese melts

  9. Serve
