  • 10 Potatoes

  • 1 Spanish onion

  • 2 Peppers, any colour

  • ½ cup Feta or parmesan cheese

  • ¼ cup Balsamic Vinegar

  • ⅛ cup Olive oil

  • Tarragon to taste

  • Salt to taste

POTATO SALAD

  1. Cut the potatoes into small sized (Roughly 1 inch cube) pieces.

  2. Boil the pieces until the potatoes are soft in texture, and do not feel hard when poked with a fork.

  3. Drain the water from the potatoes and place them into an empty bowl,

  4. Cut the onion, peppers and cheese into small “bite sized” chunks.

  5. Mix everything into a large bowl

  6. Try it!
