Potato Salad

10 Potatoes
-
1 Spanish onion
-
2 Peppers, any colour
-
½ cup Feta or parmesan cheese
-
¼ cup Balsamic Vinegar
-
⅛ cup Olive oil
-
Tarragon to taste
-
Salt to taste
POTATO SALAD
-
Cut the potatoes into small sized (Roughly 1 inch cube) pieces.
-
Boil the pieces until the potatoes are soft in texture, and do not feel hard when poked with a fork.
-
Drain the water from the potatoes and place them into an empty bowl,
-
Cut the onion, peppers and cheese into small “bite sized” chunks.
-
Mix everything into a large bowl
